A lazy Sunday indeed, I didn't even leave the house and I wore my uggies all day. Those kind of Sunday's are my fav. We had another freezer crisis this weekend - I stock food like there's a pending second round of the Great Depression - so it's back to that food blog thing again. But I won't bore you with the many dishes I prepared using the mismatch of meat that semi defrosted when the freezer door was accidently left open on Thursday...instead (my role model for food hoarding - has this lady got a pantry!) the Real Sadie's Lemon Butter. It's a cinch - I even sterilised the jars beforehand, something that always pretrified me silly for some strange reason.
The Real Sadie's Lemon Butter
125g butter chopped
450g white sugar
3 eggs
3/4 cup of fresh squeezed lemon juice
Grated rind of one lemon
Whisk the eggs lightly in a saucepan.
Add all the other ingredients to the eggs.
Cook it on the stove top over heat.
STIR IT ALL THE TIME, not one single second of resting or you get stringy egg bits.
Once it's all dissolved it will start to come to the boil. As it does that turn it off cause it's done.
Pour it into the sterilised jars. It keeps for a few weeks in the fridge.
Easy, told ya so. The key is your committment to the stirring.

I had totally forgotten about lemon butter (do you remember lemon spread?)I used to have it on toast all the time! I might buy some though, i'm not nearly clever enough in the kitchen to make it!
I don't ever remember eating lemon spread. Brownpants, it requires NO kitchen skills! And you could even by pass the sterilising of the jars if you were going to use it all up fairly quickly.
The lemon butter looks mighty mighty tasty! I laffed when I read you get petrified silly with the whole jar sterilising thing. For some odd reason, I have a strange weirdo phobia about sterilising jars too. Gotta build a bridge over that issue, methinks!
Ahah a shared phobia Marianne! The Dishwasher is your friend in the whole jar sterilising caper, then you just put them in the oven on low to dry out and you just take them out of the oven and fill em up while they're hot. Easy peasy conquer your fear!
Hey Monkey girl, lemon spread looks yum. Can you please deliver a jar of that along with your trash dip and chorizo & chickpea soup? Dinner at my place 7pm, dont be late!!!! :)

But I don't have a dishwasher!!! I too got scared about the whole sterilising jars thing. All those stories of yucky bacteria... As a result I've only made lemon butter (that's what we called it when I was young) once. But it is very very very yummy :-)
Elisabeth, it's easy to sterilise the jars without a dishwasher...just wash in hot soapy water, rinse with boiling water, then in the oven. Lose the fear!!
